Delicious grilled salmon from the BBQ

Ingredients: 2 tablespoons mustard 2 tablespoons of maple syrup 1 teaspoon freshly chopped rosemary 1 tablespoon grated lemon or lime zest 1 (wild-caught) salmon fillet with skin (2 pounds and about 1½ inches thick)
Instructions: Mix the mustard, maple, rosemary, lemon or lime, half a teaspoon of salt and pepper. Season the entire flesh side of the salmon with the mixture. Let the marinade soak at room temperature for half an hour to an hour.
Place the whole salmon skin side down on the grids of the nomadiQ baking tray. The closed grill plate is also very useful for frying fish. Grill on a medium setting until the salmon is cooked through on the BBQ and the skin appears nicely grilled. Turn occasionally. This will take about 10-15 minutes, depending on the thickness of the salmon. Garnish with some finely chopped spring onion.
Optional: grill two lemon halves on the other side of the nomadiQ BBQ until lightly charred and squeeze over the salmon when done.
Good side dish for Salmon on the BBQ Serve with grilled asparagus. Marinated in a subtle blend of garlic, virgin olive oil, balsamic vinegar, salt and pepper. Top with grated Parmesan cheese.
