Summer BBQ Recipe: Grilled Salmon with Potato Salad

Ingredients for Grilled Salmon:

  • Fresh salmon fillets
  • Olive oil
  • Lemon wedges
  • Salt and pepper to taste

Ingredients for Potato Salad:

  • 500 grams of baby potatoes or cooked potatoes, diced
  • 4 spring onions, finely chopped
  • Handful of fresh chives, finely chopped
  • 4 tablespoons of mayonnaise
  • 2 tablespoons of Greek yogurt
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions:

  1. Preheat your nomadiQ barbecue to medium-high heat.
  2. Grill the baby potatoes or cooked potatoes with some salt and pepper until golden brown and cooked through.
  3. Remove from the grill and let them cool in a bowl.
  4. In the same bowl, mix the potatoes, spring onions, and chives.
  5. Add mayonnaise, Greek yogurt, and lemon juice.
  6. Season with salt and pepper to taste. Mix well and let it cool in the shade or refrigerate if possible.
  7. Brush the salmon fillets with olive oil and season with salt and pepper.
  8. Place the salmon on the grill and cook for a few minutes on each side until desired doneness.
  9. Squeeze fresh lemon juice over the grilled salmon fillets.
  10. Remove from the grill and serve with the potato salad.
