🌞✨ Discover the magic of the mediterranean spheres with this nomadiQ BBQ recipe! 🍅🐟

Bring the Mediterranean atmosphere into your home with this delicious BBQ recipe: grilled sardines, a delicious eggplant salad and enjoy fresh bread with tzatziki on the side. Make it a party with a nice glass of wine and enjoy!

Ingredients:

  • Fresh cleaned sardines or two cans of sardines
  • Olive oil
  • Salt and pepper to taste

For the eggplant salad:

  • Eggplant, sliced
  • Cherry tomatoes, halved
  • Red onion, thinly sliced
  • Fresh parsley, finely chopped
  • Lemon juice
  • Extra virgin olive oil
  • Salt and pepper to taste

For the tzatziki:

  • Greek yoghurt
  • Cucumber, grated and drained
  • Garlic, finely chopped
  • Fresh dill, finely chopped
  • Lemon juice
  • Salt and pepper to taste
  • And fresh bread of your choice, sliced

Instructions

  1. Start with the tzatziki. Mix the Greek yogurt, grated cucumber, garlic, dill, lemon juice, salt and pepper in a bowl. Set aside in the fridge to let the flavors infuse
  2. Preheat the BBQ to medium heat and grease the grill grates with a little oil. Use some kitchen paper or a brush for this
  3. Place the eggplant slices on the grill and cook for 3-4 minutes on each side, until softened and golden brown
  4. Cut the grilled eggplant into pieces and mix with cherry tomatoes, red onion, parsley, lemon juice, extra virgin olive oil, salt and pepper in a bowl. Set aside
  5. Brush the sardines on both sides with olive oil and season with salt and pepper
  6. Place the sardines on the grill and cook for 5 minutes on each side, until cooked through and lightly charred
  7. Remove the sardines from the grill and place on a serving platter
  8. Grill the sliced bread briefly on both sides, until lightly crispy and golden brown
  9. Serve the grilled sardines with the eggplant salad, tzatziki and grilled bread
  10. Enjoy your meal!

Tip: serve delicious homemade Pineapple ginger iced tea with this

Ingredients:

  • 4 tea bags of your choice (e.g. green tea)
  • 1 cup fresh pineapple, diced
  • 1 tablespoon of freshly grated ginger
  • 1 tablespoon honey (optional)
  • Ice cubes

Instructions:

  • Brew tea according to package instructions
  • Add the pineapple cubes, grated ginger and honey to the hot tea
  • Let the mixture cool and then refrigerate to get completely cold
  • Pour the iced tea over ice cubes in glasses and serve with the dish
