Eggplant Rolls with Mozzarella

Do you fancy a delicious, but healthy recipe? View the recipe for the grilled eggplant rolls here, filled with mozzarella, pesto and sun-dried tomatoes. Roll up, skewer in and enjoy! Ideal for vegetarians, but can also be served as a delicious side dish alongside meat and/or fish.

2 eggplants
1 ball of mozzarella
2 tbsp pesto
Sun dried tomatoes
Cocktail sticks

nomadiQ BBQ
Cutting board
Paper towels


  1. Cut the eggplant(s) into long, thin slices and place a plate lined with kitchen paper
  2. Grill the eggplant slices with some salt and pepper on the nomadiQ until they have brown grill marks and then place them on the plate lined with kitchen paper
  3. Slice the mozzarella
  4. Spread the aubergine slices with pesto and then top with mozzarella and sun-dried tomatoes
  5. Roll up the eggplant slice and stick a cocktail stick through it
  6. Place the rolls on the nomadiQ for another 1-2 minutes so that the mozzarella melts a little and the rolls warm up again
  7. Enjoy!
