Eggplant Rolls with Mozzarella
Do you fancy a delicious, but healthy recipe? View the recipe for the grilled eggplant rolls here, filled with mozzarella, pesto and sun-dried tomatoes. Roll up, skewer in and enjoy! Ideal for vegetarians, but can also be served as a delicious side dish alongside meat and/or fish.
Ingredients:
2 eggplants
1 ball of mozzarella
2 tbsp pesto
Sun dried tomatoes
Cocktail sticks
Necessities:
nomadiQ BBQ
Cutting board
Knife
Paper towels
Instructions:
- Cut the eggplant(s) into long, thin slices and place a plate lined with kitchen paper
- Grill the eggplant slices with some salt and pepper on the nomadiQ until they have brown grill marks and then place them on the plate lined with kitchen paper
- Slice the mozzarella
- Spread the aubergine slices with pesto and then top with mozzarella and sun-dried tomatoes
- Roll up the eggplant slice and stick a cocktail stick through it
- Place the rolls on the nomadiQ for another 1-2 minutes so that the mozzarella melts a little and the rolls warm up again
- Enjoy!
